Ingredients


  1. Uncooked Rice: 1 ½ cups
  2. Lemon Juice: 2 to 3 Tbsp
  3. Salt: ½ Tsp
  4. Oil: 2 Tbsp
  5. Turmeric Powder: ¼ Tsp
  6. Mustard Seeds: ¾ Tsp
  7. Ginger: ½ Tbsp Finely Chopped
  8. Peanuts or Cashews: 4 Tbsp
  9. Green Chillies: 1 to 2 pieces
  10. Red Chillies: 2 Dried Pieces
  11. Urad Dal: 1 Tsp
  12. Hing: 1 Pinch
  13. Chana Dal: 1 ½ Tsp
  14. Spring Curry Leaves: 1

Cooking Instructions


1. Soak both chana dal and urad dal in 4tbsp hot water for 15 minutes, drain the water as it helps to soften the dals.

2. Similalrly wash the rice and drain the water.

3. On a large pot, add three cups of water and cook the rice under a low flame.

4. You can also cook the rice in a pressure cooker until the cooker gives three to four whistles.

5. As soon as the rice cools down, add lemon juice, salt, and 1 tsp oil on the rice and mix it delicately. This will keep the rice firm and grainy.

Preparation

1. Take a pan and heat the oil on a medium flame.

2. Mix peanuts or cashews, red chilli, chana dal and urad dal after it turns hot.

3. Fry the mix for sometimes until the dal turns golden and aromatic.

4. Now, gently add mustard and allow it to crackle, further add green chillies, ginger and curry leaves on the mix.

5. Deep fry the mixture until the dals and peanuts turn crunchy. Now add turmeric and hing.

6. The mix is ready. Pour it into the cooled lemon rice and mix it eventually.
